Traditional Middle Eastern food will soon be served at the city's newest test kitchen as it sees a steady boom in business.

Salah El Nagar, a political refugee from Egypt, is heading up a two-month residence at First Draft Bar & Kitchen in Upper St Giles Street from next month. 

He will be serving traditional cuisines from his homeland including hummus and baba ganoush "as you've never tried them", yoghurt marinated shish taouk and pistachio baklava.

And as part of his residence, he will be partnering with New Routes Integration which aims to support and empower refugees, asylum seekers and migrants across Norwich.

Ahead of September, Dan Larkan, co-owner of First Draft said: "Salah's food is incredible and we're so excited to be giving him a full restaurant to play with.

"This pop-up is even more special for us because we hope it'll bring some support, awareness and funding to a charity that couldn't be more important and needed in the current climate."

Any profit made by the bar and kitchen during the two-months will be donated to New Routes.

Salah's pop-up, which will last all of September and October, is the third to be hosted by First Draft Bar & Kitchen, which opened in early June.

The business is all about nurturing and showcasing the culinary talent of Norwich, according to Daisy, and "giving local foodies access to the next big thing before it happens".

She said: "The business has been such a trial by fire, we've learned so much so quickly but we love how much people seem to be enjoying the place.

"It's happened organically that we're the 'monthly date night' for a chunk of our customers and that's just the best.

"We're currently exploring options for being open during the day, too, with a proper coffee offering so watch this space."
