The former head waiter at The Ritz in London will bring "five-star service" as the new owner of a Norwich bar and restaurant.
The Last in St Georges Street has now reopened, with mother-and-son duo Joanna and Sebastian Taylor at the helm.
It has been shut since July 2023 and the pair have put their own stamp on the restaurant, with Mortimer Fraser appointed head chef.

Mr Taylor, 31, is the front-of-house manager and his previous role was at the world-famous London hotel The Ritz.
He grew up in Norwich and worked at places such as St Giles House and Delia's Restaurant and Bar.
He moved to the capital and spent a decade at The Ritz, working his way up from commis to head waiter.
He said: "I wanted to come back to Norwich to run this beautiful restaurant and bring it back to its glory days and maybe even better.
"It is such a beautiful location and we are near the Playhouse for pre-theatre drinks and dinner too.
"My first child was also born four months ago so I wanted to be closer to family."
The a la carte menu has both British and French influences, with dishes such as monkfish Wellington, and customers can also visit just for drinks.
There is also a set menu, Sunday roasts and afternoon tea is launching in May.

The latter will be served in the space previously used as a café and it will be called Taylor's at The Last.
Mr Taylor added: "Mortimer is an up-and-coming young chef and we have let him build his own team and menu - we are eventually aiming for three AA Rosettes.
"Come along for exquisite food using local produce with some beautiful wines and cocktails and five-star service."
