Mr Herbert, who comes from Cromer, spoke fondly of the town and was initially pleased to receive a crab for his first challenge.
He was tasked to create a crab bisque served with white crab meat and John Dory but failed to cook the fish in the 20-minute time limit.
In the second challenge, contestants had to make a signature two-course meal of their choosing.
Mr Herbert opted for a roasted lamb loin with a pea puree, asparagus, salsa verde and an anchovy cream for his main and a baked egg custard tart topped with nutmeg for dessert.
The judges praised his perfectly cooked lamb and asparagus but his custard tart failed to bake in time.

Mr Herbert and fellow contestant Dimi Penziev were sent home while Verity Hurding and Philippe Sonou secured spots in the next round.
Mr Herbert said: "Leaving at this stage is difficult because obviously I wanted to do as well as I could.
"Falling at the first hurdle - I am just a little bit disappointed."
