Born in Spain in the 16th century and popularised by America's deep south, barbecue food is a summer staple.
From chicken and beef to hotdogs and seafood, a barbecue can come in many forms and is not just limited to smoked meats.
To celebrate National BBQ Week, which runs until June 4, we've put together a list of some of the best places in Norfolk you can find great barbecue food.
1. Archers Butchers
Where: Plumstead Road, Norwich, NR1 4AB
Serving Norwich for more than 90 years, Archers Butchers is one of the city's best meatmongers.
This week it is offering a range of specially-prepared barbecue meats, ready for the home grill, as well as a range of Norfolk-made rubs.
Based in Thorpe Saint Andrew, the company also offers click-and-collect, home delivery, catering, and a takeaway service which includes hot baguettes, jacket potatoes, pastries and daily specials.
2. The Station Smokehouse
Where: Station Road, Hoveton, NR12 8UT
Start your barbecue journey at the Station Smokehouse with any of its traditional American-style starters including wings, nachos and jalapeno poppers.
The restaurant's "Pit Boss Tray" comes with your choice of ribs, brisket and pork.
Tables go quickly so book early to ensure you get in.
3. The Smokey Grillhouse
Where: Nursery Drive, North Walsham, NR28 0DR
This North Walsham restaurant has been serving smoked barbecue since 2012.
Open Friday and Saturday from 5pm to 10pm in North Walsham Garden Centre, Smokey Grillhouse offers grilled meats and fish from local suppliers and fresh vegetables from local farmers.
It also offers gluten-free and vegetarian meals and can host evening functions.
4. Zaks Diner
Where: Gurney Road, Mousehold Heath, NR1 4HW, The Street, Poringland, NR14 7RP, Barrack Street, Norwich, NR3 1TS
With two restaurants in Norwich and a third in Poringland, Zaks has been serving its diner-style eats since 1976.
From its "famous" burgers and mac and cheese to a range of desserts, either of its branches are the perfect place to find barbecue food all year round.
Zaks even has a line of merchandise.
5. Brix And Bones
Where: 68 London Street, Norwich, NR2 1JT
Nominated for this year's best local restaurant by the Good Food Guide, Brix and Bones operates an ever-changing menu with local produce and seasonality.
The restaurant's special boards offer many different sizes and cuts of dry-aged meats that are always aged for a minimum of 45 days.
A team of "mixologists" assist chefs in providing each dish with a selection of carefully paired wines and cocktails.
6. Gorilla Street Kitchen
Where: Various pubs
Run by James Williams, a chef with 20 years of experience, Gorilla Street Kitchen is bringing barbecue food to a range of pubs in Norfolk this summer.
At The Plough in Norwich, he served Japanese-style burgers and at The Ostrich in Castle Acre a Greek barbecue, saying the pop-ups allow him to adapt what he cooks every time and switch it up depending on the weather.
More pop-ups are to be announced soon.
7. Liquor & Loaded
Where: Tower Street, King’s Lynn, PE30 1EJ
From "messy mains" to loaded fries, Liquor & Loaded is King's Lynn's answer to barbecue.
Along with barbeque food and cocktails, the restaurant also serves pizza and a Sunday roast with up to four meat options.
Booking is advised so call ahead to book one of its curb-side pick-up slots.
